Sole Florentine

4-6 oz sole; flounder or swai can also be used

4 oz cooked spinach

Kosher salt

White pepper

Dash nutmeg

1 tbsp grated parmesan cheese


1Preheat steamer unit to boil.

2In a bowl, combine spinach, salt, pepper, nutmeg and cheese.

3Lay out fish. Top with spinach mixture.

4Roll up the fish and place on steamer.

5Cover and steam 20 minutes or until internal temp is 150 F.

Temperature: 350F
Water: Fill to line
