Pumpkin Bread Pudding

13 mini croissants cubed

4 eggs

15 oz can pumpkin

1 tbsp pumpkin spice

12 oz. milk

1 c. heavy cream

1 c. sugar (a sugar substitute will also work)

1 tsp vanilla


1Put cubed croissants into pre-greased 8x8 pan.

2In a separate bowl, combine rest of ingredients and pour over croissants.

3Let stand in the refrigerator for 2 hrs.

4Preheat steamer unit to boil.

5Set pan of bread pudding in skillet on top of wire rack and cover with lid.

6Steam for 20 min.

Water: Fill to line
