Penne with Vodka and Fire Roasted Tomatoes

1 lb. penne pasta

2 tbsp. olive oil

1 med. onion diced

4 cloves garlic minced

14 oz can fire roasted tomato

Parmesan cheese grated

1 oz parsley chopped

Salt and pepper to taste


1Fill skillet to waterline and bring to a boil.

2Add penne and cook for 12 minutes.

3Drain pasta and set aside.

4Add oil, onion and garlic and sauté gently for 1-2 minutes. Be careful not to brown the garlic.

5Add remaining ingredients including the pasta and stir.

6Serve with Italian bread.

Temperature: 350 F.
