Black Bean and Brown Rice Burger with Pico De Gallo

Ingredients

Burger Patty Ingredients

12 oz can black beans drained and rinsed

8 oz frozen corn

8 oz cooked brown rice

1/4 c. red bell pepper diced

4 green onions sliced

2 tbsp. chili powder

2 tbsp. cumin

1 tbsp. granulated garlic

Juice of 1/4 orange

Juice of 1/2 lime

1/4 c. cilantro chopped

Salt and pepper to taste

2 tbsp. extra virgin olive oil

1 c. Pico de Gallo

Breading Station Ingredients

1 c. flour

2 eggs beaten

1/4 c. water

1 c. fresh bread crumbs

Directions

Burger Patty Directions

1Preheat skillet to 350 F.

2In a bowl, combine all ingredients listed above and mix well.

3In a food processor, pulse half the mixture until it is uniform in texture.

4Transfer back to bowl and mix thoroughly.

5Form into patties and set aside for the breading station.

Breading Station Directions

1Add flour to a small bowl.

2Mix together eggs and water and add to a bowl.

3Add breadcrumbs to another bowl.

4Always remember F.E.B. (flour, egg, bread) in this order. This is the standard breading procedure.

5Add a small amount of oil to the skillet.

6F.E.B. each patty and add it to the skillet.

7Brown each side 3-4 minutes.

8Place on a bun and top with Pico De Gallo.
