Beef Tenderloin with Shitake Mushrooms and Brandy

1 tbsp. extra virgin olive oil

4 six oz pieces of beef tenderloin

3 shallots minced

8 oz shitake mushrooms without stems and sliced

4 oz Brandy

4 oz heavy cream

8 oz beef stock

1 tbsp. butter (optional)

Salt and pepper to taste


1Preheat skillet to 350 F.

2Add oil and beef.

3Cook each side 3-4 minutes.

4When juices from the beef start to pool on top, remove from pan. At this point the meat is medium rare.

5Add mushrooms and shallots and sauté 3-4 minutes.

6Add brandy and let reduce by 1/2.

7Add beef stock and cream.

8Reduce by 1/2 or until the sauce is slightly thickened.

9Season to taste.

10Transfer to a plate and spoon sauce over the beef.
