BBQ Beef Brisket

1Place dry wood chips in bottom of skillet and set the control to 400 F.

2Set the meat on the steamer plate and place on skillet and cover for 3 hrs.

3Remove the steamer plate and meat.

4Discard the wood chips.

5Place wire rack in the bottom of the skillet.

6Set brisket on top of rack.

7Add 64 oz water to skillet and cover for 2 hrs.

8Check water every hour to maintain the water level line.

Cooking Time: 5 hrs
Temperature: 200 F
Serves: 6-8
